My trainer & I also encountered wind this last week on I-80, going through Nebraska, heading tward Denver.
It must have been a storm front; just all at once, the wind began gusting.
This was the first time I ever expirenced this, and it was scary. I couldn't go any faster than 45mph, and it felt like I was going to blow off the road, a couple of times.
I myself was wondering what you do in a situation like this?

If you're uncomfortable with it and it's too windy Park It.
Sometimes out west they'll make the decision for you and throw up the Gates.

Good post and I always wondered about this myself. I was driving out of luling, la just before hurricane rita last year and while crossing the bridge, that wind was blowing me all over, cross winds and I was empty. They never covered this in school and I think, after my experience with it, its very important.

I don't remember this subject being covered in school either.
