Let's say I wanted to haul grain in a dump box. How do you get the thing to dump?

Open the tailgate, engage the power take off, engage the clutch, put the up - down lever in the "up" position, and raise the box.

a wet kit on the truck that lifts a hydraulic cylinder(s), is that what you meant or are you talking about getting it out of the dump box? we have hauled wheat in a dump truck and just put empty seed bags in the tailgate to fill the gapes then just pulled them out when we started dumping at the elevator.

None or our trucks have a wet line or PTO or anything like that. Dumb it down for me pleeeez. Can I modify a truck to haul corn, wheat & soybeans in a dump trailer?

You can...if you get the wet kit installed, as furbis already stated. Cost would be right close to $3500, depending on shop rates. Easier way to haul grain, if such is your intent, would be to lease a "hopper-bottom" trailer or 2.

Yeah that's what I was looking for. Seems like you can get a grain truck from August to November around here so I was just thinking is all.

Check around, some grain elevators have dump platforms which raise the trailer up on a hoist to dump it. If so, you could use a covered wagon and save the expense of a PTO and dump trailer. Also, as mentioned, look into renting a hopper bottom.
