I'm at home this weekend doing domestic stuff...making pickles.... Anyway I am at this moment making beet pickles... and... Mandy decides she wants to "see" what I'm up to.... Beet Pickles... 3 Tbsp pickling spice in spice bag 2 1/2 cups white vinegar 1 cup water 1 cup white sugar 10 cups cooked, peeled beets Combine sugar, water, vinegar in large heavy pot, add spice bag. Boil gently for 15 min. Pour over prepared beets in hot, sterile jars, leaving 1/2" head space. Process for 30 minutes in canner. I like to let them sit for 6 weeks before using. Makes about 6 pints |
