You know that section of the store right next to the meat department that's been growing like weeds lately? Precooked meatloaf, beef tips. roast bee au jus etc. Well I happened to notice some Tyson grilled chicken breast on sale for $2.50 (6 oz package) and figured I'd try it.

In the same department there are different brands of mashed potatoes, mac & cheese etc. So far my pick is the Bob Evans stuffing but I'm still experimenting. Some stuffing and a can of veggies and it's a pretty good meal.

I like to add the chicken to the Burton "meatloaf" pan first and slide it to one end. Next I drain and add the veggies. I put the stuffing/potatoes on top. This way any water that leaches out of the veggies just helps keep the veggies and chicken from burning but doesn't make the stuffing soggy.

Hmmm, mmmm, not a bad meal that's pretty healthy, cheap and easy.
