    In case you were wondering Gary....here's Mandy...

    I'm at home this weekend doing domestic stuff...making pickles....

    Anyway I am at this moment making beet pickles...

    and...

    Mandy decides she wants to "see" what I'm up to....

    First...she has to see what's in the sink...I'm peeling the beets...



    Then...she kinda gets in & checks the stuff...



    And...

    Low & behold....she decides ... maybe...they might be good to EAT????



    Now, whoever heard of a CAT eating BEETS????

    Hey! Share your recipe for pickled beets!!! I love them! I just made some sweet jalapenos...ummmmmm.....

    Bloo...mine ... I make a brine with pickling spice & sugar...gives 'em a bit of a zing...way tastier...will get exact recipe & post when I get home OK?

    Bloo...

    Beet Pickles...

    3 Tbsp pickling spice in spice bag
    2 1/2 cups white vinegar
    1 cup water
    1 cup white sugar
    10 cups cooked, peeled beets

    Combine sugar, water, vinegar in large heavy pot, add spice bag. Boil gently for 15 min.

    Pour over prepared beets in hot, sterile jars, leaving 1/2" head space. Process for 30 minutes in canner.

    I like to let them sit for 6 weeks before using.

    Makes about 6 pints

    Hey Kat! I missed this thread somehow! I guess that I've been spending too much time at the other forums educating Golfhobo!

    Looks like my Precious is doing just great. Does she still go trucking?

    Blackjack (the kitty formerly named Blacky) made the trip just fine and loves his new home.

    Here he is with his big brother Bodhi. Bodhi was a working sled dog in his younger days. Rhonda adopted him about 9 years ago. He is as gentle as they come.
