    Default Crock Pot Lemon Chicken with Rice

    Most crockpot chicken recipes use some sort of canned cream soup. Not this lemon chicken recipe. It's got all natural ingredients and you control the sodium.
    • 1 cup long grain converted white rice
    • 1 small onion, diced
    • 2 Tbsp. olive oil
    • 8 cloves garlic, peeled and smashed
    • 1/2 cup dry white wine
    • 1/2 cup water
    • 1 cup fresh lemon juice
    • 1 dash Tabasco sauce
    • 6 bone-in chicken breasts, with skin removed
    • salt and pepper to taste
    Put first eight ingredients in slow cooker. Stir. Place chicken breasts on top. Season with salt and pepper. Cover and cook on low 5-6 hours.


    Serves 6.

    Per serving: 311 calories, 6 g fat (1 g saturated fat), 68 g cholesterol, 29 g carbohydrate, 1 g fiber, 30 g protein, 1% Vitamin A, 37% Vitamin C, 4% calcium, 14% iron

    I can't help asking this one...

    I've heard the term "CONVERTED WHITE RICE" more times than I care to count... But, what was it in it's previous life, before it became "CONVERTED"? Converted from what???

    It use to be a barley

    via dictionary.com.. converted rice: white rice prepared from brown rice that has been pressure-steamed to enable the nutrients within the bran to be absorbed by the starchy endosperm before the rice is dried and milled
