    Default A few lunch box oven recipes

    Omelet:

    Egg Beaters
    Pre cooked meat (ham, sausage, bacon, etc) (optional)
    Salt and pepper.
    1 cheese slice (optional)

    In a foil pan liner pour in enough egg beater to cover the bottom. Add salt, pepper and meat. Close lid and allow to cook for 5-10 minutes until egg mix is almost completely cooked. Place cheese on top and finish cooking until cheese is melted.

    Meatloaf:

    1 lb hamburger (use at least 80% lean though 85% or better works best)
    salt and pepper
    4-6 tablespoons of steak sauce
    Ketchup

    You can also add in diced green peppers, onions, dry soup mixes (1/2 envelope) as desired.

    In the hamburger package mix the meat, salt, pepper, and steak sauce together, place in a foil loaf pan and put into oven. Cook for 45 minutes, top with ketchup and cook for another 15-20 minutes.

    Easy bbq baked beans and weenies:

    1 can of pork and beans drained of all liquid
    Honey BBQ sauce (enough to coat the beans)
    1/4 cup brown sugar (optional)
    2 or more hot dogs, cut up

    Mix all items together in loaf pan. Allow to cook for at least 1 hour up to 4 hours.

    Tip:

    If you use the mini loaf pans and do a little bending you can cook two items at the same time in the lunch box oven.

    Tip:
    Do a little advanced planning. Many of these items take an hour or longer to cook. Mix ahead of time and store in your "fridge". Then about an hour or so before you want to eat, make a quick stop, place item in oven, plug in stove and set on floor and continue on down the road to where you are planning to stop for a break.
    Finding the right trucking company is like finding the right person to marry. I really comes down to finding one whose BS you can put up with and who can put up wih yours.

    I love my lunchbox stove so much I have two of em. I can cook just about anythng you want on the truck. Thanks for the recipes
