View Full Version : Pita Salad Sandwiches

Okay, seriously this time..

Everybody knows how hard it can be sometimes to get enough fresh veggies and avoid heavy, fatty fast-food meals on the road. One of my favorite pack-along lunches consists of a big salad, pita (pocket) bread and dressing - usually Ranch or Italian. Make up the salad ahead of time and carry in a large margarine tub or a gallon ziplock bag in your cooler or fridge. Load it up with your favorite goodies - I usually include chopped carrots, onion, celery, fresh brocolli, spinach, boiled egg, bell pepper, cheese cubes, etc., and usually some kind of meat. If you so desire, chopped ham, chicken, pepperoni, summer sausage or canned tuna are all good choices (although the latter is best added just before serving.)

To enjoy, slice pita bread in half and open up to form pockets. Stuff in a generous helping of salad, top with your favorite dressing, and chow down!

Yeah pitas are usually the best to eat. They hold a good amount and they're not as messy as regular bread. They also don't take up as much room to store as a loaf of bread. A variety of flavours they come in too. Wheat, white, onion, garlic and sesame. Drive safe everyone. :)
